The University of Guelph offers hands on wetlabs (basically a horse dissection weekend). I took two students in 2008 and we had a fabulous time. It is expensive but well worth the trip if you want to learn more about horse internal anatomy and aren't afraid to get dirty. More information can be found below.

I have never been to the Everything Equine Event in Kemptville but it sounds like a worthwhile trip.
